The cooking is all the techniques of preparation of food with the aim of their consumption by the human beings. The cooking is diverse worldwide, fruit of the local natural resources, but also the culture and the faiths, the perfection of techniques, the exchanges between peoples and cultures.
The cooking so exceeded its simple biological imperative of food to become a corpus of more or less sharp techniques, a cultural fact, a national or family element of heritage and identity, an element of valuable systems, but also a subject of study for the social sciences and the sociology, even a stake in policy and in public health.
The cooking is originally a natural necessity as far as, since the prehistory, the human being feeds on one hand on food in the rough, such as seeds or fruits, but also on the other hand, of indigestible food without transformation such as meats or tubers, such as it is necessary to cook to make them edible.
The cooking is also an eminently cultural activity, connected to the traditions, to the local know-how, etc. it follows technical, economic and sociocultural principles.
The cooking contributes to shape the image of a country, its culture, even its tourist charm. It is so a factor of national identity and an element of national immaterial cultural heritage for certain countries (as Mexico, Morocco, France and Italy).
The "gastronomic meal of the French people" was registered on Tuesday, November 16th, 2010 on the immaterial heritage of the Humanity by an intergovernmental committee of Unesco gathered in Nairobi.
France had put down(deposited) in 2009 a demand of classification of its gastronomy for the world heritage of the humanity, resuming an idea launched by big names of the French cooking.
Let us have the best gastronomy of the world , had declared the French Head of State, who inaugurated the 45th agricultural show in Paris this year there.
Today, only France is registered on the immaterial heritage of the humanity. In 2005, Unesco had rejected a request this way of Mexico.
